Bourbon Pecan Caramel Sauce

Ingredients
  • 1cup chopped pecans, toasted
  • 3/4cup light brown sugar
  • 1/2cup heavy whipping cream
  • 1/4cup (1/2 stick) butter
  • 2tablespoons light corn syrup
  • 1teaspoon pure vanilla
  • 1-2tablespoons bourbon
Instructions
  1. In a dry medium skillet over medium-high heat, stirring constantly, toast pecans until lightly browned, about ?? minutes. Remove from heat and set aside.
  2. In a medium saucepan over medium-high heat whisk together brown sugar, heavy cream, butter, and corn syrup. Bring to a boil then lower the heat to a simmer. Cook for 5 minutes stirring constantly.
  3. Remove from heat and stir in toasted pecans, vanilla, and bourbon. Cool 10 minutes before serving. Store leftovers in refrigerator.
