Onion Garlic and Herb Roasted Potatoes
Crispy oven roasted potatoes flavored with garlic, rosemary, thyme, and my homemade onion soup mix. Or use a packet of store bought.

Ingredients
  • 2pounds baby new potatoes(or four medium potatoes cut into bite sized chunks)
  • 1/3cup olive oil
  • 1teaspoon garlic powder
  • 1teaspoon dried rosemary, crushed
  • 1/2teaspoon dried thyme, crushed
  • 1recipe DIY Homemade Onion Soup Mix(or one packet onion soup mix)
Instructions
  1. Preheat oven to 425°.
  2. Cut potatoes in half or quarters. If using large potatoes, cut into bite-sized chunks. Add to a large mixing bowl.
  3. To the bowl, add the remaining ingredients and stir to combine. Pour onto sheetpan and spread into single layer.
  4. Roast, stirring occasionally, for 30-35 minutes or until crispy and browned.
