Onion Garlic and Herb Roasted Potatoes
Crispy oven roasted potatoes flavored with garlic, rosemary, thyme, and my homemade onion soup mix. Or use a packet of store bought.
baby new potatoes
(or four medium potatoes cut into bite sized chunks)
dried rosemary, crushed
dried thyme, crushed
DIY Homemade Onion Soup Mix
(or one packet onion soup mix)
Preheat oven to 425°.
Cut potatoes in half or quarters. If using large potatoes, cut into bite-sized chunks. Add to a large mixing bowl.
To the bowl, add the remaining ingredients and stir to combine. Pour onto sheetpan and spread into single layer.
Roast, stirring occasionally, for 30-35 minutes or until crispy and browned.
